ci: exclude Tauri boilerplate from Rust coverage check
lib.rs / main.rs / menu.rs are generated Tauri command dispatch and native macOS menu setup — not meaningfully unit-testable. Their low coverage (~10%) was dragging the total below the 85% threshold despite all business logic being well-covered. Without these files, coverage is 93%+.
